Dr. Jenn’s at it again with another one of her great, super healthy recipes! Here’s one for all you Quinoa lovers out there!
Ingredients:
- 1 cup quinoa
- 2 cups water
- Pinch of sea salt
- 1 large carrot (peeled and chopped)
- 1 medium red onion (chopped)
- 1 cucumber (chopped)
- 1 sweet pepper (red, green, yellow, or orange- chopped)
- 2 handfuls of baby spinach (torn into small pieces)
- ¼ cup raisins
- 100 grams of feta (crumbled)
- ¼ cup fresh parsley (chopped)
- ½ cup toasted sunflower seeds
Dressing:
- ¼ cup olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp. honey
- ¼ tsp curry powder
Instructions: Cook quinoa according to package directions adding a pinch of sea salt into the water. When done, add it to a large bowl and allow to cool (add raisins while quinoa is cooling so that they absorb some water). Once cooled, add all remaining ingredients minus the sunflower seeds. Mix dressing, add to salad and stir. When ready to serve, add sunflower seeds, toss, and voila!
